Quick and Easy Pancakes

Serves 4:

Ingredients:

2 cups all-purpose flour
2 Tablespoons, sugar
1 teaspoon baking soda
1 teaspoon salt
2 1/2 cups buttermilk
2 eggs, beaten
2 Tablespoons butter, melted
Juice and zest of ½  lemon (optional)

Preparation:

1. Preheat electric pancake griddle to 325F or stovetop griddle over medium heat.

 2. Combine dry ingredients in a medium sized bowl stirring with a whisk.

3.  Combine wet ingredients and add to dry until just combined. A few small lumps is ok.

4.  Pour pancake batter on hot griddle. When bubbles form on the top and burst,  flip.

 5. Serve hot with butter, syrup, jam or compote.
